Air Fried Chicken Breast Nuggets

This summer has had a constant chorus of “I’m hungry” from my three girls. The “I’m hungry” every hour is only slightly more annoying than the “what’s for dinner tonight,” that I often hear sometime around mid morning,

Of course, my kids just want to snack. If it was up to them, the cupboards would be loaded with chips, cookies and the freezer stocked with ice cream bars. I sound like a broken record… choose something healthy please. I’ve found that if I present them with healthier options, they usually eat them.

That’s where my idea of snacking chicken came from. I mean I don’t think snacking chicken is a real thing, but it should be. Chicken makes a great snack. It’s flavorful and full of protein, and when it’s in bite-sized pieces, it’s so easy to eat. Everyone seems to love these air fried chicken breast nuggets.

Easy Marinades

Lately, I am all about reducing food waste and using up what I have. Marinating little pieces of chicken breasts has been really helpful in using up things I might not have. Like pickle or olive juice. The pickle juice marinated chicken breast bites have been a favorite here.

I also like to use prepared dressings and marinades, for convenience. I am very particular about the dressings and sauces that I use because I am trying to eliminate the use of seed and vegetable oils. Many of the prepared dressings at the grocery store seem to have soybean oil in them (often as the first ingredient) and it’s just not good for you.

For today’s air fried chicken bites, I marinated the chicken in Green Goddess dressing and marinade from Primal Kitchen. I also really love their Ceasar dressing and marinade. Another marinade I enjoy is the Sweet Thai Chili sauce from Guy Gone Keto. I have used it on cauliflower bites HERE.

Imperfect Foods

Earlier this year, I started getting groceries from Imperfect Foods, and I haven’t looked back. It’s a food delivery box where you can order produce meat and other foods that would otherwise go to waste. The food is all very high quality and I am always pleased with my purchases. Air Fryer

I use the GoWise basket air fryer. Do I love it? Ehhhhhh, it’s okay. I’ve had this one for a couple of years and it works well. Sometimes the digital temperature display doesn’t seem to want to show all the numbers, and there seems to be a little bit of flaking on non-stick surface of the basket. I always use a liner in the air fryer (now they have reusable silicone liners!) Maybe the newer air fryers are better quality? I don’t know. Eventually I will upgrade though, either to the Ninja Foodie or Instant Vortex.

If you have the basket type air fryer, be sure to use tongs! I have burned my wrist on more than one occasion reaching in there. Guess I’m a slow learner.

Air Fried Chicken Breast Nuggets

Air Fried Chicken Breast Nuggets

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 23 minutes
Additional Time: 2 hours
Total Time: 2 hours 28 minutes


  • 1 pound boneless skinless chicken breast
  • 2 tablespoons Primal Kitchens Green Goddess Dressing


  1. Cut chicken breasts into bite sized cubes. Place in a bowl with a lid or ziplock bag.
  2. Mix chicken breasts with 2 tablespoons marinade.
  3. Cover and refrigerate for at least 30 minutes, 2 hours is ideal.
  4. Heat air fryer to 360F.
  5. Place chicken in air fryer basket in a single layer.
  6. Cook on 360F for 8 minutes.
  7. Flip the chicken over, using tongs, and cook for another 8 minutes.
  8. Flip the chicken one last time and cook for 5 minutes.


Chicken needs to reach internal temperature of 165F for safety.

You should just do it at 400 for like 16 or less minutes. 360 for that long sounds like too much even when I air fry breasts it’s roughly 17 mins at 400F
