Simple Slow Cooked Taco Chicken

This easy taco chicken in the slow cooker is a delicious recipe that can be made ahead of time and used in meals all week.

This simple slow cooked taco chicken recipe is one that I frequently make. It’s quick and easy and it’s a foundation for many of my lunches and dinners. Plus, everybody likes it, which is always a win in a busy family.

Three Ingredient Slow Cooked Taco Chicken

I buy a big bag of frozen chicken breasts at Costco, and then pull three out at a time to thaw in the fridge. Additionally, this recipe calls for stewed tomatoes. I have been using the Easy Homemade Stewed Tomatoes that I made when I had that windfall of beef tomatoes last week. But I also frequently use canned diced tomatoes, if I don’t have the homemade ones on hand. Lastly, the recipe calls for taco seasoning. My go-to taco seasonings are either from Penzey’s or DAK’s Spices Taco Knight.

Slow Cooker or Pressure Cooker

You can make this recipe using a slow cooker or Crock Pot. Also many of the modern pressure cookers have a slow cooker setting, which is a great space saver. Although I have heard of people leaving the slow cooker on while off at work, I do not do that. Always refer to the slow cooker manual. Also follow these safety tips from the USDA in regards to cooking food in the slow cooker.

Simple Slow Cooked Taco Chicken

Cook Time: 4 hours
Total Time: 4 hours 5 minutes

Ingredients

  • 3 large boneless, skinless chicken breast (fat trimmed off)
  • 14.5 ounce can diced tomatoes
  • 3 tablespoons taco seasoning

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Stir taco seasoning into diced tomatoes.
  3. Cover chicken breasts with the tomato mixtures. Cover the slow cooker and turn on to low for 7 - 8 hours or on high for 4 hours.
  4. When chicken is finished cooking, it should easily shred with a fork. Stir the tomatoes and chicken together well and serve.
